All your query display uses web templates as default to display query results so you need to change that in case you need more columns.
Check transaction RSCUSTV27 to see what is maintained as your default web template to Ad hoc analysis (if it is blank then you are using 0QUERY_TEMPLATE. You need to open this up and change the settings for the table item. You can either make changes on this template, or make a copy of it and change there. In the latter option you will need to set your copied template as the Ad hoc analysis template then.
